El Dorado is made by Demerara Distillers Limited, which draws its name from the Demerara river region where the sugarcane is grown. The distillery still runs some of its rum through wooden pot stills that were salvaged from historic Guyanese sugar estates, several of which are more than a century old, giving the spirit a heavier, more textured character than column-distilled rums. The 15 Year Old is matured in oak casks and carries dark brown sugar, honey, and rich prune on the nose, backed by heavy oak spice. The finish settles into roasted nuts and dark chocolate.

Mount Gay traces its records back to 1703, which makes it one of the oldest documented rum producers still operating. The XO Triple Cask Blend combines rums aged between five and seventeen years, distilled on both pot and column stills, then matured separately in three cask types: ex-American whiskey, ex-bourbon, and ex-cognac barrels before being blended together. That combination is what gives the rum its layered profile of salted caramel, ripe banana, and toasted almond, rounded off with warm baking spice.

Brugal has been distilling in the Dominican Republic since 1888, and this expression comes from a newer line built around what the brand calls Aromatic Cask Toasting. Instead of adding coffee directly to the rum, virgin oak casks are toasted using rare Dominican Arabica coffee beans, which are then removed before the casks are filled, so the rum absorbs coffee aromatics through the wood rather than through direct contact. The result carries bright citrus and deep caramel up front, with an espresso-like finish that reflects the toasting process rather than any added flavouring.

Bacardi moved its production to Puerto Rico after leaving Cuba in the 1960s, and Gran Reserva Diez is one of its more serious aged expressions. Most rums are filtered after ageing, but this one is charcoal filtered before it goes into American white oak barrels for a minimum of ten years, a sequence the brand says gives it a cleaner base to build complexity on. It opens with stone fruit, peach, and pear, moving into overripe banana, and settles on caramelised vanilla with toasted oak on the finish.

Zacapa is distilled from guarapo, the first-press juice of sugarcane, rather than the molasses most rums are made from, which gives it a naturally sweeter starting point. The rum is then aged in Guatemala's highlands at an altitude of roughly 2,300 metres, where cooler temperatures slow down evaporation and let the spirit mature more gently than it would at sea level. The Sistema Solera process blends rums aged between six and twenty-three years across barrels that previously held whiskey and sherry. It comes out thick and velvety, with honeyed butterscotch, spiced oak, and dried fruit, closing on a trace of leather and tobacco.

Ron Reserva 22 is produced under the El Ron Prohibido label by Tequila Corralejo, using guarapo pressed from sugarcane grown in Veracruz. The rum is aged in a solera system across 22 American oak barrels, and the first four of those barrels are macerated with walnut and almond shells along with peach kernels sourced from Zacatecas before being filled, which is where the rum picks up its more unusual flavour markers. Expect fresh peach and anise upfront, with vanilla and sweet molasses running underneath.
