The Nutmeg Collective, one of Singapore's most respected hospitality groups, built Tess Bar & Kitchen on a simple but underserved idea: that a serious drinks programme and genuinely good food should occupy the same room. They do here. Twenty-six cocktails, a kitchen producing pork jowl linguine and mushroom risotto substantial enough to anchor the evening, and hours generous enough to make the whole thing feel unhurried.
